baked goodness

Today our fabulous pal Karen lunched with us, and Mr. Joffa made these friands for dessert. The plums are ruby reds, and they taste even better than they look…


Recipe is from Simple Cafe Food, by Julie Le Clerc.

Preheat oven to 180C, grease a 12 hole muffin pan. Place 175gms melted butter, 1 cup almond meal, 6 lightly beaten egg whites, 1 1/2 cups icing sugar, and 1/2 cup plain flour into mixing bowl. Stir til just combined. Pour into muffin pans until 1/2 full.

Top each with half a plum ( any seasonal fruit can be used – I’m thinking boozy apricots next time, or stewed rhubarb? ), bake for 25 minutes. Leave in tin for 5 minutes before turning out.
