savour the flavour of kangaroo

We like to cook. A lot. Here’s what we threw together last night.
Vetti and Joffa’s speedy kangaroo salad
* take some kangaroo fillets, cut into small chunks, marinate in red wine and freshly ground pepper
* boil a large beetroot until just tender
* quick blanch some purple asparagus
* cook kangaroo, adding dried wattleseed and a little red wine jus (Bio-Grape is my favourite) to deglaze the pan
* combine all the above with tomato wedges, rocket, and a little more red wine jus. toss and serve immediately.
Ironically, we could have consumed kangaroo wine with this dish, as I was given some Ulupna 2005 Shiraz as my homework last night. It has a trio of naff looking roos on the label, which pleases me not. However, we chose to consume a gorgeous bottle of Alfresco Red (2006 Shiraz) from Martins Hill Mudgee instead. Anyone wanting the goss on the Ulupna, we will be opening it tonight, alongside a goat’s cheese salad. The wine guy promises the roos will vanish from the labels. And not a moment too soon…
And now for the third and final kangaroo reference – these 1960’s misses and their Australian ABCs book (Woman’s Day, 26/9/66). The illustrator obviously didn’t want to show Skippy looking her best, that’s all I’m saying.


Skippy – it’s what’s for dinner!
Here’s my (uncharacteristic) vego dinner tip:
some might call it a salsa, I call it a salad
avocado
tomato
capsicum
spring onion
rocket
corn
black beans
lemon juice, salt and pepper, no oil required-remarkable
ingredients preferably fresh, preferably organic
(alright the beans were out of a can, but hey)
I used corn chips rather than a fork
yummy, the only thing missing was coriander
especially recommended for bachelorette dinners xx
m1k3y: yeh, i am prepared to pick up my knife and fork to solve the roo overpopulation problem. who’s with me?
kj: omg that sounds good! we had a warm beef salad, and some kickass rw garcia soy and flaxseed tortilla chips.
kj, that’s one of my favourite dinners ever. but i prefer lime to lemon juice. and since when were you any authority on “bachelorette” dinners? you’re as good as married. or is there something i don’t know?
vetti.. i reckon i’ll be catching and cooking kangas before the year is out. we can do swaps, i’ll send you roo steaks in exchange for decent coffee and the like.
eroica: remember, anyone can be a bachelorette – i am for 4-6 wks at a time when the bloke is o/s.
mebbe you could start a gourmet roo business when you move? i’m quite partial to filets, backstraps and salami, if that helps. will certainly send you care packages – coffee, etc. keep in touch, yeh?
